I have noticed this effect on a number of different sports programs, across
networks, not just Sunday Night Football on NBC. Fox pretty much sounds the
same way during their regular season NFL games. That's what we watch the
most.

It does seem to help when I put my receiver into one of the surround modes.

I haven't tried switching to mono but I do have a mono TV that seems fine
for these games.

Now that I think about it, we saw tonight's game at one of those "Big Game"
parties with church friends, using a projector and mono-summed audio into
some PA speakers. It sounded really good in mono, given that the room was
relatively noisy with party-goers visiting and whatnot.
